The story of Chop Shop Park City and it’s owners John Courtney, Chuck Heath and Dan Ibach, all started with the perfect charcuterie shared amongst friends…

After visiting a butcher shop and tasting room in Northern California together, Chuck and Dan and his wife Courtnay, decided they wanted nothing more than to bring their dream of a true European Style deli and butcher shop to the mountains of Park City.

Chef John was looped in for his expertise and interest in delivering something unique to the area and Chop Shop was born. Chop Shop offers up the idea that good things happen over a shared experience between friends and family – it is how the concept came to be, and is at the core of the experience the moment you walk in the shop.

 
 
 

Who better to trim the fat than an ex-banker?

From a food-loving kid, to banking, to opening and working at some of the most well-known restaurants in Las Vegas; Carson Kitchen, and Yardbird, as well as Hattie B’s, Lardo and Pok Pok at the Cosmopolitan of Las Vegas, Chef John Courtney’s culinary journey has been anything but traditional.

Early on, John knew he wanted to cook. When he was finally able to realize his dream, he found himself working his way up the industry ladder after culinary school with one goal in mind…to make it to the mountains someday.  Knife in hand, John is a culinary luminary who always seems to find himself on the cutting edge of the craft food scene, which landed him square in the middle of the farm to butcher to table movement as Park City’s newest Butcher at Chop Shop.

He prides himself on knowing each farmer and rancher personally and believes the producers are the cornerstone of the business.
